Rocket Lobster salad
Here we go with a simple seductive warm Lobster salad….
I think this is my new fave Lobster dish, and ok it comes with a price tag because everything in it is top drawer!, but for a special treat now and again this is perfect!
1 cooked Lobster approx 1kg dismantled, tail meat and claw meat removed and sliced into bite-size pieces
1 bag of wild Rocket washed approx 100g
1 spring onion chopped, chopped and chopped again until very fine
3 or 4 large cloves of garlic crushed and finely diced
150-200g on the vine cherry tomatoes the best you can buy on the day!, sliced in rough quarters
1 small glass of white wine perhaps a decent chardonnay with citrus notes
50-100g of Samphire grass if available
1/4 pack of real salted butter(it has to be this way!)
1/4 of a Lemon,
Method in my madness!
Ok here we go shellfish fans!, in a frying pan heat your butter until its melted and sizzling then add the spring onion and stir fry for a minute without colouring the spring onion, you only need a low flame at this stage, now throw in the garlic and stir fry for 30 seconds.
Its now time to pour in the wine and reduce the liquor by 1/3 to cook out the wine!, now a small squeeze of lemon goes in and a generous grind of salt n pepper.
If you’ve bought or foraged some Samphire take a big hand full and chop it into 30mm sticks then throw it into the now reduced yummy liquor and let it simmer for a minute, arrange your Rocket in a bowl or on a plate, now get your sliced Lobster in the pan and roll it around for a minute coating the yummy Lobster with your heavenly reduction!, OK grab a spoon and carefully arrange your scrumdidleyumptious slices of Lobster on the Rocket then arrange your tomatoes and finally spoon over the reduction and Samphire to finish the dish!, serve immediately with crusty bread n butter and the rest of the vino ;))
