All of our smoking is done on site, We only buy day boat fish from Plymouth market and source our Salmon from Scotland.

The fish gets brined in our secret recipe then rested for a long period(Pellicle stage) this creates a sticky glaze that the smoke adheres to thus giving a fuller flavour to the finished product
